The turkey tomato panini melt is a super delicious sandwich you can make in almost no time. I love to use Roma tomatoes for this recipe, but any tomato works well. For a bit of green I sometimes like to add some baby spinach leaves or a bit of fresh chopped basil, depending on my mood.
Try it with a side of soup or salad for adelicious lunch.
You only need the following.
Ingredients
- Italian bread - similar to French bread, but softer
- Smoked Turkey slices or chunks
- Sliced Tomato (I like to remove the seeds & gel)
- Cheese - Gouda or Mozzarella
- Small amount of Olive Oil
- Small amount of Butter, if cooking in a skillet
Directions
Slice the Italian bread open. Lightly brush some olive oil on the inside of the bread. Load it up with layers of turkey, tomato and cheese. I also like to grind some fresh black pepper before I close the sandwich.
Now to cook it!
In a Sandwich Press:
Preheat the press. Add your sandwich and grill until golden brown, about 3-5 minutes depending on your press.
In a Skillet:
Melt a small amount of butter in a pan on medium low heat, and add your sandwich.
Cook until golden brown - about 3-5 minutes per side.

PS. Feel free to experiment with a sauce of your choice. Pesto works very well with these flavors. You can also experiment with different cheeses and/or herbs.
