This is a fantastic twist on the classic chicken salad sandwich recipe. The southwest-style chicken salad is all about zing! It has an unexpected Tex-Mex kick that revives this classic flavor into the new era. Well, that and I love to get creative with salad recipes. So if you'd like to try a classic home-made recipe with a twist, this might be the sandwich for you.
It is a great picnic sandwich - just make sure to keep it cool for freshness.
The recipe below is for 2 sandwiches.
Tip: All of the ingredients are approximates. Feel free to adjust them to your taste. But these measurements are how I enjoy to make this recipe.
Chop the chicken into small cubes. Place in a small mixing bowl.
Stir in mayonnaise, sour cream and lime juice.
Add the rest of the ingredients, mixing ingredients evenly.
Chill the salad in the refrigerator for about an hour.
Once the salad is cool you can eat it any way you like. Wrap it in a tortilla. Put it on top of toast. Or use whole wheat bread and make a sandwich with it.
